The Dorian routine is one of the best in my opinion, good luck.
As for the what to do instead question:
Nautilus curls - Dumbell concentration curls
Hammer Strength pulldowns - Close grip pulldowns
Hammer Strength one-arm rows - Dumbell rows
Hammer Strength rear-delt machine - Bent over laterals or cable laterals
Hammer Strength seated bench presses - Bench press with very slight incline
