Lean Chili Con Carne
Lean Chili Con Carne Ingredients: 1 onion, finely chopped 1 large carrot, grated 2 sticks celery, chopped 1 tsp cumin, ground 1 tsp smoked paprika 500g lean mince 1 red capsicum, chopped 2 tbsp tomato paste 400g red kidney beans (canned) 400g tomatoes (canned) 100g baby spinach leaves, rinsed avocado, chopped 1 bunch coriander, chopped 1 lime Red chilli, to taste Directions: Stir fry onion, carrot and celery for 3 minutes, until softened. Add spice and mince and cook through for 5 minutes until mince is browned. Add capsicum, tomato paste, canned tomatoes and beans then pour over two cups of water. Simmer over a low-medium heat, until thick. Season with ground pepper and fold in spinach and coriander. Serve in bowls topped with chilli avocado and a squeeze of lime. Enjoy as is or with a side of steamed green vegetables or quinoa. Nutritional Info: Per serving 281 calories 23g protein 10.9g fat (3.1g saturated) 11g fibre |
